Do you ever have those days where you are craving something and your mind just won’t let it go? Usually it’s carbs or cheese for me, pizza, pasta, spinach dip. I’ve been doing great lately with my diet and sticking to my set calories every day and not really craving much. But today I saw a blog post from Surprisingly Healthy with a mashed cauliflower recipe and my mouth just started watering. But the good part is that at least it’s cauliflower instead of mashed potatoes, little improvement. Here is the original post that I adapted this from: Easy Way To Add More Veggies
So a 4oz serving of baby red potatoes is about 100 calories and 20 grams of carbs, while the same serving of cauliflower is only 14 calories and about 2.5 grams of carbs. Huge difference! You could eat way more cauliflower! So don’t feel guilty with this yummy side dish, it’s guilt free! I’m nibbling on it as I type
Mashed Garlic Cauliflower
Serves 2-3 per head of cauliflower
What you need:
1 head of cauliflower per 2-3 servings
2 tablespoons olive or coconut oil
4 garlic cloves
small pinch of parsley
2 tablespoons of almond milk
salt and pepper
What you do:
1. Steam the cauliflower until is is soft.
2. While that is steaming heat the oil in a pan and press the garlic into the pan with your handy dandy Pampered Chef Garlic Press and cook the garlic until it starts to brown.
3. When the cauliflower is done blend it or use your super easy Pampered Chef Manual Food Processor to process the cauliflower until it is smooth. Add to the processor the garlic and oil mixture and the pinch of parsley. Add the 2 tablespoons of almond milk. Grind some fresh salt and pepper over it and a dash of paprika. Continue processing until it is well blended and nice and smooth and creamy.
4. Enjoy! This can easily be reheated later, it stores well, and goes great with so many different dishes. You could even consider serving it with your Thanksgiving dinner!
I also just have to share about my new friends I’ve been making lately. I’m trying to be more social and widen my friend list, so this weekend I attended my first Meetup.com group here in Tucson. There was 4 of us girls and we attended a women’s health expo. We had a great time checking out the booths, talking, getting to know each other, and then we all had lunch at Blanco’s (fabulous mexican restaurant with a view to die for!). I think I definitely made some new connections and I would love to hang out with those girls again.
Just recently I also joined a blogging buddy group and made some new online friends. It’s a great supportive group of bloggers that I have to give a shout out too!
